Falafel with Ancient Grain Salad

200g dry chickpeas

200g dried and peeled fava beans

2x medium onion peeled and quartered

2x cloves garlic

Small bunch of parsley

Small bunch of coriander

Salt and pepper

1/4 teaspoon bi-carb soda

Falafel spice


Soak chickpeas and fava beans over night in cold water

Using a food processor; put the drained chickpeas and flava beans

Add onion, garlic and coriander and whizz until fine and combined add salt and pepper

Add falafel spice and 1/4 teaspoon bi- carb to mixture just before frying

Heat vegetable oil in fry pan, shape falafel and fry on both sides until golden
